While typing my fingers to the bone I have not surfaced until it’s minutes away from dinner and my three hungry teens along with their friends come looking for me to ask me, “What’s for dinner?”I had to post these two recipes that ended up becoming an amazing surprise. Meaning I just threw them together and was utterly shocked they tasted so good.
The first one I will call “Fisherman’s wife Bake”1. first sprinkle quinoa on bottom of baking dish. 2.Next sprinkle water on top.3. spread asparagus on top 4. Any boneless/ skinless white fish fillets on top of the asparagus.5. sprinkle lemon pepper and slices fresh lemons on the fish.6. in a saucepan mix on med. low heat 1c. Greek yogurt,1/4 parm., 2 wedges laughing cow light Swiss cheese, 2 Tbs. butter, salt and pepper. 7. Pour sauce over fish and bake at 350 until cooked.

It is a chicken thigh bakeingredients:- 1 package chicken thighs-1/2 c. Dijon mustard-1/4 maple syrup-1 Tbsp. rice wine vinegar-fresh rosemary-salt and pepperJust put the chicken in a baking pan. Pour over sauce and bake at 450 for about 40 min.
