Donkey and I on Shrek have two things in common. We have very loud mouths, and we love waffles. However, while donkey looks cute with a pooch, I unfortunately do not. So I have searched for a while, looking for a waffle that does not use a ton of oil. This one substitute OJ instead, and the taste is amazing! It is awesome with sliced bananas and a handful of chopped pecans. Enjoy!
Orange Waffles
Measure and mix together theses dry ingredients:
– 1 3/4 C. whole wheat
– 2 tsp. baking powder
Make a hole in the center and add wet ingredients below:
– 2 eggs
– 2Tbsp melted butter or coconut oil
– 1 1/2 C. orange juice
Cook in a well greased waffle iron (like cooking spray)
Makes about 5-6 waffles.
