Low Fat Dark Chocolate Muffins

I love dark chocolate, muffins, and oatmeal, and this has it all. I couldn’t just stop when I found a good thing I added raspberries and cream cheese to the mix.

Ingredients:

  • 1 c. old fashioned rolled oats
  • 1c. non fat milk
  • 1c. whole wheat flour
  • 2/3 c. stevia for baking (in large green bag; measures equal to sugar)
  • 1/3 molasses (or instead of stevia you can use turbino  sugar and omit molasses)
  • 2/3 c. unsweetened applesauce (I added not fat plain yogurt instead)
  • 2 egg whites
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 6 Tbsp. unsweetened cocoa powder
  • 1/2 tsp. salt
  • 1 c. dark chocolate chips (I like Ghiradelli double chocolate)
  • 1 block of light cream cheese mixed with honey until sweetened to taste
  • 1c. (or however many you want) frozen or fresh raspberries
  1. soak oats in milk for about 1 hour.
  2. preheat oven to 375 degrees and then spray muffin pans or line
  3. combine oat mixture with applesauce or yogurt and egg whites, then mix until combined.
  4. In separate bowl whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined.
  5. Add chips and raspberries. do not over mix.
  6. Spoon up until half of the muffin. then add a spoonful of cream cheese mixture. I sprinkled the raw sugar on top for looks but not necessary
  7. Bake for 20 -25 min. or until firm.
